Sea Bass Spetsiota

Ingredients
  • 2 sea bass
  • 2 ripe tomatoes, finely chopped
  • 2 tbsp. parsley, finely chopped
  • 1/2 cup olive oil
  • 2 tbsp. green olives, cut in rings
  • 4 cloves garlic, minced
  • salt, pepper
Steps

Clean and scale the fish. using a sharp knife, make a couple of slits across on both sides and place in a baking dish. Season with salt and pepper, and sprinkle with garlic and parsley - see that they all get into the slits as well as into the belly. Add tomato, olive rings and olive oil. Bake in very hot preheated oven for 8 to 10 minutes. Tip: Sea bass is oftn used in this dish but you can also use other fish: e.g bream, dentex, grouper
