Steamed Mussels

Steamed mussels

  • 2 pounds mussels
  • 2 ripe tomatoes, finely chopped
  • 2 tbsp. parsley, finely chopped
  • 5-6 cloves garlic, minced
  • 1/2 cup olive oil
  • 1/2 cup ouzo
  • 2 tbsp. olives stuffed with pepper
  • salt, pepper

Heat olive oil in a pot.Saute garlic. Place well scrubbed mussels in pot and cover for 1-2 minutes. Add ouzo, parsley, tomatoes, olives, salt and pepper. Let cook for 2-3 minutes. Discard any unopened mussels. Serve hot.
