Ingredients
  • 1 pound puff pastry
  • 8 oz anthotyro cheese, crumbled
  • 2 tomatoes, finely chopped
  • 2 eggplants, thinly sliced
  • 1/2 cup olive oil
  • 2 tbp. kalamata olive paste
  • 2 clovesgarlic, minced
  • salt, pepper
Steps

Roll out puff pastry and cut into 4x6 inch pieces. Bake in a medium oven for 10 minutes, until golden. Place olive oil in a apn and tomato in garlic, salt and pepper. Fry the eggplant. In a baking tray place one layer of puff pastry. Spread each puff pastry piece with about 1 tbsp. anthotyro and olive paste and place 1 or 2 eggplant slices and tomato sauce on top. Cover with a puff pastry piece and repeat the process. Finish with puff pastry. Put the baking tray in a hot preheated oven and bake for 4 minutes. Serve hot.
