The harvest of Greek olives varies depending on the variety. Also, the olives mature at different rate so they are not ready all together for harvesting
Green, Halkidiki & Amfissa olives are harvested mid-September to mid-October, when the fruits are green coloured, good sized and not too mature.
Greek Black (round olives) are harvested late in November when the color of the fruit is becoming almost black (violet, dark brown).
Kalamata olives are harvested late in November-December and sometimes until January.
The olives should be black coloured, mature and right sized. The ideal is to pick them from the trees many times during the course of a harvest (every time to pick the dark).
The traditional method for harvesting is still BY HAND, which secures top quality fruits without damages or hits.
